Super Easy “Dairy Free” Red Wine Hot Chocolate

So you know when you come across something and you think, “Uh…why didn’t I think of that?”  Well, that was me while perusing the ol’ interwebs when I came across something that was so obvious it’s kind of amazing that I haven’t explored the amazing possibilities of something so glorious as red wine hot chocolate! WHAAAAT?!?  I know, right? But then I thought to myself, I said, “Self, it’s too much.  Too rich, too gluttonous.” And you know what self said next?  Do it dairy-free then! Boom done, that ‘s all I needed to feel just fine about this whole operation.

I learned two things while tweaking this little “recipe”.  1: A food photographer I am not, and 2. I was totally over thinking it.  We’ve been keeping Silk Dark Chocolate Almond Milk in the house regularly to heat up for the kids as hot cocoa so, I thought  this would be the prefect base for mommy’s new favorite drink to cuddle up by the fire with.  I was not wrong.  I played with adding Enjoy Life  chocolate chunks to it as well, but my husband said it was too rich and tasted like brownie batter.  I saved them for later.  This delicious treat is way too easy!

DAIRY FREE RED WINE HOT CHOCOLATE:

For two small mugs or one big one you’ll need:

  • 1 cup Dark Chocolate Almond Milk (I used this one)
  • 1/2 cup red wine (I used a Malbec, but you can use whatever you enjoy)
  • 1/2 tsp. Vanilla extract

Heat the almond milk in a pan when it begin to come to a simmer, add the vanilla, take off heat, add wine, and VIOLA…pour and enjoy!

Now if you’re anything like me you’re thinking well, since I essentially made this a healthy drink by using almond milk, I could splurge a bit and put it over the top with a yummy topping.  Ok, I got you…Coconut Whipped Cream, my friends…still dairy free!  Now I’ll admit, this requires a bit of planning because you have to put a can of full fat coconut milk in the refrigerator at least a full day before you intend to make it.  That said, I’m pretty confident that once you try this whole concoction it will be a staple in there like butter and eggs. That may or may not be the case here in the Lanier house. 😁

COCONUT MILK WHIPPED CREAM:

You’ll need:

  • I can of Organic Heavy Coconut Milk (like this one)
  • powdered sugar to taste (I used 2-ish teaspoons)
  • 1/2 teaspoon Vanilla extract

About 30 minutes or so before you want to enjoy this treat you’ll want to place a metal bowl along with the beaters from your hand mixer in the refrigerator.  Once that they’ve spent enough time chillin’, take your cold can of Organic Heavy Coconut Milk, scoop out the solid chucks into the cool bowl.  There will be coconut water left in the can.  You should pour it in a separate container to save for smoothies or something at a later time.  Place your chilled beaters in your hand mixer and mix the coconut milk chunks.  Once it begins to whip up add powdered sugar one teaspoon at a time while mixing until it’s your desired sweetness.  FYI, you could also use regular sugar, honey, maple sugar or agave to sweeten if you prefer.  Just be light handed with it, it’s much easier to add than to take away. *There are those time when there’s a whack can of coconut milk that won’t whip up.  You’re best bet at avoiding this is to purchase a quality organic product, which is really my rule of thumb for most anything, really.  Also, when you’re in the store shake the can and if it feels slushy inside, skip it and find one that feels more solid.  Top your hot cocoa, if you want to get fancy sprinkle some cacao or I grated some of the vegan chocolate chunks on top.

FOR THE KIDS:

  • Just heat up that same almond milk as is,  slap some of that coconut whip cream on top and they’re good.  My kids LOVE this and really feel like they’re doin’ big things with their mugs, walking’ around calling it coffee, LOL.

So there you go,  easy peasy.  Heat up the almond milk for the kids, pour, then add the wine for mama, boom, a little something for everyone, and for me something to sip on while my husband puts down egg nog like he’s going to win some sort of prize.  To each their own, I suppose.  If you’d rather not go dairy free and or don’t mind a tiny more effort that’s totally worth it here are some great options to check out:
