Hey all! So, like most all children, my kids love treats and as a mom I’m always looking for ways to let them have a little something that’s delicious, satisfying, and if I can even get easy and healthy in there…BONUS! I feel like this recipe for chocolate pudding made from avocados checks all the boxes. Fortunately they really love it, but I’m pretty sure I could trick’em if I had to and they’d have no idea the avocado was in there. It’s great for so many reasons, including the fact that it’s easy enough for the kids to make on their own with limited supervision. It’s also pretty hard to mess up. I like to keep it really laid back in the kitchen and believe in tweaking until it’s right for the taste buds in this house, so use this as a guide and make it your own. If you want it sweeter add a touch more agave, maple syrup, honey or an extra pinch of salt. Some folks use regular cocoa powder or melted chocolate chips in place of the cacao, but there are health benefits linked to cacao, so we opt for that. You can omit the almond milk all together but if you choose, but I find it makes it a bit silkier. You can add it or any other milk of you choice. We’ve done it with all different toppings including whip cream, nuts, sprinkles, mini chocolate chips, and we’ve done it plain. It’s yummy all ways. Chocolate Avocado Pudding Recipe:
- Place 3 super ripe Avocados in a blender or food processor
- 1/3 cup Cacao powder
- 1/4 cup of Agave or Maple Syrup
- 1 tablespoon Vanilla Extract
- 1 tablespoon Almond Milk (optional…can use dairy milk)
- 2 pinches of salt
- Blend until smooth, spoon in cups or bowl, and let chill in the fridge for at least 1 hour
- Add topping if you choose and enjoy!
